"A preparation method of Dehydrated Celery. Before trimming and dehydrating, the selected celery can be treated with 1%-2% sodium hydroxide at room temperature or boiling water for 5 minutes-10 minutes; the boiling time depends on the type of raw materials. The difference is that the leaves become translucent or the raw materials are slightly soft; if the scalding is excessive, the nutrient loss will be large, and the rehydration ability will decrease; the water in the pot should always be kept in a boiling state during the scalding process, and the vegetables should be kept in the pot after they are placed in the pot. Turn it over to make it fully heated and evenly heated; the boiled vegetables should be immersed in cold water immediately after they come out of the pot to dissipate heat, and new cold water should be poured continuously.
